Sounds yummy. Where do you find apple balsamic vinegar? I love black cherry balsamic and also fig balsamic, both hard to find. A go to favorite for me is talapia filet with a fluffy salad! Much like the one you described.

Years ago someone give me Apple Balsamic vinegar for a present, and I fell in love. The brand I found at specialty stores in town is Ritrovo, but I now order this through Amazon. It is sometimes out of stock, so I always have a bunch in reserve (smile.)

My favorite is a cucumber salad, chopped cucumber, red, green or orange bell pepper, tomato, Kalamatta olives, Basil and sometimes feta cheese dressed with California olive oil and blackberry vinegar. Here in northwest Oregon, blackberries grow wild, and I fill a jar with berries and pour in white vinegar, let set for a few days or months (depending on supply and the price of peppers) and blackberry vinegar results.. Any leftovers get mixed with lettuce the next day with blue cheese dressing

That does sound yummy. How fun that you make your own blackberry vinegar! I loved making blackberry pies, back when I could eat such things!
